Pork and Pepper Stir-Fry

Ingredients

  • 1 lb. ground pork
  • 1/2 tsp. chili powder
  • 1/4 tsp. ground cumin
  • 2 Tbsp. olive oil
  • 1/2 medium onion (thinly sliced)
  • 1/2 red bell pepper (thinly sliced)
  • 1/2 green bell pepper (thinly sliced)
  • sesame seeds
  • jasmine rice
  • cilantro (chopped)

Instructions

  1. Add olive oil to a skillet and cook ground pork over medium-high heat about 3 minutes or until pork reaches an internal temperature of 160 degrees F, breaking pork in to 3/4-inch crumbles. Season with chili powder and cumin.
  2. Add onion and peppers to pan, cook and stir until onion is tender, about 3-4 minutes.
  3. Serve over jasmine rice and top with cilantro.
